  • 1 box yellow cake mix
  • 1/2 cup light cream
  • 1/2 cup milk
  • 1/4 cup sugar
  • dash of salt
  • 4 tsp. cornstarch
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 3 ounces semi-sweet chocolate
  • 2 tbsp. butter
  • 1/4 cup light cream
  • 1/2 cup powdered sugar
  • 1/2 tsp. vanilla

Instruktioner

  1. Prepare the cake: follow the directions on the box to bake two 8?9 inch round cakes. Allow the cakes to cool completely.
  2. Make the custard filling:
  3. a. In a saucepan combine 1/2 cup light cream and 1/4 cup milk. Heat over medium until bubbles form.
  4. b. Add 1/4 cup sugar and a dash of salt; stir until dissolved. Remove from heat and cover.
  5. c. In a separate bowl mix the remaining 1/4 cup milk with 4 tsp. cornstarch until smooth, then add 2 beaten eggs and stir.
  6. d. Pour the egg?milk mixture into the cream mixture, return to low heat and stir constantly until the mixture thickens.
  7. e. Remove from heat, stir in 1 tsp. vanilla and let the custard cool completely.
  8. Assemble the cake:
  9. a. Place one cake layer on a platter and spread the cooled custard on top.
  10. b. Place the second cake layer over the custard.
  11. Make the chocolate frosting:
  12. a. In a small saucepan melt 3 ounces semi?sweet chocolate and 2 tbsp. butter over low heat.
  13. b. Remove from heat and stir in 1/4 cup light cream.
  14. c. Add 1/2 cup powdered sugar and 1/2 tsp. vanilla; beat for a couple of minutes until smooth.
  15. Frost the assembled cake with the chocolate frosting (or use store?bought frosting).

custard filling:

combine light cream and 1/4 cup of the milk in a saucepan and heat over medium heat until bubbles start to form. add sugar and salt
and stir until dissolved. remove from heat and cover. combine remaining 1/4 cup milk and cornstarch and stir until smooth. add beaten

eggs. pour mixture into the cream mixture and return to low heat. stirring constantly, heat until mixture starts to thicken. remove from
heat and stir in vanilla. allow mixture to cool completely. place one layer of the cake on a cake platter and top with cooled custard.
place remaining layer of cake over the custard and top with chocolate frosting (recipe to follow) or you may use store bought frosting.

chocolate frosting:

3 ounces semi-sweet chocolate
2 tbsp. butter

1/4 cup light cream
1/2 cup powdered sugar
1/2 tsp. vanilla

in a small saucepan, melt chocolate and butter over low heat. remove from heat and stir in light cream. add powdered sugar and vanilla

and beat for a couple of minutes until smooth.

the skinny: use fat free half and half in place of the cream. use low fat milk and your favorite egg and sugar substitutes.
