Ingredienser

  • 2-3 ounces honey walnuts (recipe follows)
  • 8 ounces medium shrimp, peeled and deveined
  • 1 egg white
  • 2 tablespoons cornstarch
  • 2 cups vegetable oil
  • 1 tablespoon mayonnaise
  • 1/2 tablespoon condensed milk
  • 1/2 tablespoon evaporated milk
  • 10-1/3 cups water, divided use
  • 3/4 pound shelled walnuts
  • 4 tablespoons sugar
  • 5 cups vegetable oil
  • 1 cup powdered dry skimmed milk
  • 2/3 cup sugar
  • 1/3 cup hot water

Instruktioner

  1. Bring 5 cups water to a boil, add walnuts, boil 5 minutes, then remove and drain.
  2. Rinse walnuts in cold running water, drain, and repeat the boiling step with another 5 cups water.
  3. Bring the remaining 1/3 cup water to a boil in a wok, add 4 tablespoons sugar and boil 1 minute while stirring constantly.
  4. Add the boiled walnuts, stir until they are coated and the liquid has evaporated, then drain.
  5. Wash and dry the wok. Heat 5 cups vegetable oil to 350?°F and fry the coated walnuts 4?5 minutes until golden brown. Remove, drain and cool on a baking sheet, separating them so they do not stick together.
  6. Butterfly the shrimp by splitting them from the underbelly about halfway, leaving the tails attached.
  7. Coat the shrimp with the egg white, then with the 2 tablespoons cornstarch.
  8. Heat 2 cups vegetable oil to 350?°F and fry the shrimp 2 minutes until crispy but not brown. Remove and drain.
  9. Warm the remaining ingredients (1 tablespoon mayonnaise, 1/2 tablespoon condensed milk, 1/2 tablespoon evaporated milk) on medium heat; do not let it boil.
  10. Add the fried shrimp and the honey?glazed walnuts to the warmed sauce, toss to combine, and serve.

butterfly shrimp (split them in half from the underbelly about halfway along, leaving the tails firmly attached), coat with egg white and then cornstarch. heat oil to 350 degrees and fry shrimp until crispy but not brown, about 2 minutes. remove and drain.

warm remaining ingredients on medium heat. do not boil. add shrimp and nuts. serves 2.

here in switzerland we dont have such things as sweetened condensed
milk made with skimmed milk, so i made my own

sweetened condensed milk

1 cup powdered dry skimmed milk
2/3 cup sugar
1/3 cup hot water

put above ingredients in blender and process until smooth — or set in a
pan of hot water and stir until dissolved. equals one can of the
commercial stuff.

sweetened condensed milkthis recipe is a great substitute for eagle
brand milk. many times i dont have it or ive
had it too long and it is caramelized.
saves money, too. 1 cup powdered milk, 2/3 cup
granulated sugar, 1/3 cup boiling water, 3 tbsp.
melted butter or oleo. combine all ingredients
in electric blender and process until smooth.
store in refrigerator until ready to use. yields
1-1/4 cups or same as 1 can eagle brand milk.
