Deep-fried walnut chicken
serves 4 to 6
1/2 pound chicken breasts, boned and skinned
2 egg whites
1 teaspoon salt
pepper to taste
1/4 cup cornstarch
2 cups walnuts, coarsely chopped
2 to 4 cups oil for deep-frying
sliced canned pineapple
stemless maraschino cherries
directions:
cut chicken breasts into bite-sized pieces.
beat egg whites to soft peaks. add salt and pepper. sift cornstarch onto egg whites. fold in gently.
dip chicken pieces into egg white mixture.
put walnuts on aluminum foil. coat chicken evenly with walnuts.
heat oil to 375 degrees in wok. deep-fry chicken. drop in a few pieces at a time. fry until golden brown. drain.
place chicken on platter. garnish with pineapple and cherries.
may be prepared in advance through step 4 and refrigerated. do not freeze.
